CM Cooking School Staff (For Ages18 & Up) HANDS ON. BASSICS. Scaloppine is a thin piece of meat, dredged in flour, seasoned and sautéed. While veal is the most common meat used, we have some other offerings for these impressively simple entrées. Chicken Scaloppine with Hatch, Mushrooms & Balsamic Vinegar; Pork Scaloppine with Hatch Avocado Sauce; Turkey Milanese with Hatch Salsa Rosa; and Mango Scaloppine with Mango Hatch Sorbet. $60 CLASS TIME: 6:30 - 9 PM Students must dress with safety in mind. Please wear completely closed shoes, no sandals. Long hair should be pulled back and up.
